January is a month with a tight budget for many and perhaps especially for students. Food is one of the big items - do you know how to keep food costs down? A hot tip is to cook the food yourself, from scratch. Another is to cook vegetarian, it is usually cheaper than if you have meat or fish in your dish. For a large part of the year, you can get various root vegetables for a small amount of money, and they fill you up really well as well. Carrots, onions and a small piece of celeriac become a superb base for soup, which can then be varied endlessly.
We would also like to recommend falafel - so good! The basis of falafel is, of course, chickpeas that must be soaked - for a long time. And seasoned with lovely aromatic spices. It is not difficult to make falafel, but time consuming. So do many while you're at it, invite your friends and serve with some bulgur or rice and a fresh salad. Next time they can offer something else tasty. So you both share the food costs and have a good time together.

PS. Did you know that Swedish farmers used to call the cold months after Christmas until April the Ox months? The barns were empty and nothing grew because of the cold. Even today, the period may feel heavy, as many people have a little money left in their account and it is a long way until the next holiday.
